Cucumber Salad (Hungarian: Uborkasaláta)

Cucumber Salad (Hungarian: Uborkasaláta)

A delightfully light salad which takes only a few minutes of preparation, and a favorite of my dad's.
  • 500 g (1 lb, 1 1/2 oz) cucumbers (use juicy ones!)
  • 1/2 teaspoon salt
  • Salad dressing
  • 1/2 small onion, sliced, or clove garlic (optional)

Peel cucumbers, then slice or shred thinly. Salt lightly, and allow to stand 30 minutes.

Squeeze out excess liquid (add garlic or onion), pour on the salad dressing and chill. If using garlic, remove it before serving.

Salad Dressing (Hungarian: Salátalé)

Salad Dressing (Hungarian: Salátalé)

This basic dressing is used in many simple vegetable salads.
  • Water
  • Salt, pinch
  • Sugar
  • Vinegar
Flavor the water with the ingredients to obtain the piquant taste of lemonade.

Green-Pepper Salad (Hungarian: Paprikasaláta)

Green-Pepper Salad (Hungarian: Paprikasaláta)
  • 500 g (1 lb, 1 1/12 oz) green peppers (not hot peppers)
  • Salt to taste
  • Salad dressing
Core the green peppers, cut into rings, and salt lightly. Allow to stand for 1 hour, then pour on the dressing, and allow to stand for another hours.
