- 1 kg (21/2 lbs) apples
- 150 g (5 1/4 oz) sugar
- 1 tablespoon rum
- 1 egg white
Bake the apples in a very hot oven, pass through a sieve, and before it cools, add the rum, sugar and egg white, and beat until stiff.
Tip: for a nice touch, decorate the top with berries or a wafer (or both!)
