A delightfully light salad which takes only a few minutes of preparation, and a favorite of my dad's.
- 500 g (1 lb, 1 1/2 oz) cucumbers (use juicy ones!)
- 1/2 teaspoon salt
- Salad dressing
- 1/2 small onion, sliced, or clove garlic (optional)
Peel cucumbers, then slice or shred thinly. Salt lightly, and allow to stand 30 minutes.
Squeeze out excess liquid (add garlic or onion), pour on the salad dressing and chill. If using garlic, remove it before serving.See recipe for salad dressing
